May Recipe: Chilled Berry & Yogurt Soup
This 5-minute Chilled Berry & Yogurt Soup is a refreshing, vitamin-packed light summer lunch. It requires no cooking, uses minimal ingredients, and blends the creamy texture of a smoothie with the elegance of a cold soup.
Ingredients
Berries: 3 cups mixed fresh berries (any combo of strawberries, raspberries, and blueberries)
Yogurt: 1.5 cups plain Greek yogurt (adds protein and creamy texture)
Liquid: 1/2 cup almond milk, coconut water, or orange juice
Sweetener: 1-2 tbsp honey or pure maple syrup (to taste)
Flavor booster: 1 tsp fresh grated ginger and 1 tbsp fresh lemon or lime juice
Garnish: Fresh mint leaves and a handful of whole berries
Directions:
Blend: Add all ingredients (except the garnish) to a high-speed blender. Blend until completely smooth.
Strain (Optional): Pour the pureed soup through a fine-mesh sieve into a large bowl to remove berry seeds for a silkier texture.
Chill & Serve: Cover and refrigerate for at least 2 hours so the flavors can meld. Ladle into cold bowls, top with fresh whole berries, and garnish with mint and a few berries.
